The yearly olive harvest
This time of year almost all our time and energy is spent on olives... Which this year is extra exhausting due to the weather. The rain is hovering if not pouring down on us every day, and the olives are ready to be picked so we've to do it anyway, in the wet...
Before it hadn't rained in months and the olives were kind of dry with a low "render", so we waited for the rain to max the oil production, and now it won’t stop... Usually, we have a render of about 18% of the fruit weight. 100kg of olives give you 15-20 liters of oil.
We pick the olives by spreading big nets on the ground, under the trees, then you shake the branches with a motor-driven arm or by hand with a long cane, till the fruits fall down. then you collect them and rinse them from small branches and leaves. At the end of the day, we take the harvest to one of the mills in the village that rinse, wash and mill the olives in cold conditions for extra virgin oil.
Around here all the hills are covered with olive groves, almost all of the Bosana type that was taken here by the Spanish during the 16'th century. The trees are often old, ours, for example, have around 150 years! And nearby we also have a tree that is more than 1000 years old!!
The Bosa oil is very famous and often win prices for its quality. The taste is very fruity, a little bitter and spicy. here the oil is used for everything and makes a big part of traditional cooking. It’s actually a great flavor enhancer and without it, the food wouldn't be the same. Once you've tried it you can't live without it... Only in our house of two adults and two small children we use about 50l yearly! The rest we bring to Sweden and Körsbärsgården to sell in the shop.
